16. Pray for someone- with them- outloud

On July 9th 2010 I lost another person in my life.

Kathy Miller was a "mother" to me when I was in 8th grade and my Dad moved to Texas a month before school let out. The Millers took me into their home and treated me as their own child for the weeks that I lived there. I have never had a relationship with another family as I have with the Millers.

MINUTES before my Dad passed away Kathy Miller called me to pray with my Dad, however he was asleep so I asked if she would pray with me. Kathy prayed the sweetest prayer and I firmly believe God sent her to me for that ONE moment in my life where I would need to have the softened heart of acceptance to understand and accept the fact that God had bigger plans and that my Dads time had come for him to transition into heaven. Kathy was the last person I talked to before my Dad passed 2 minutes later. Her prayer was exactly what I needed, God was speaking through her to me. I'll never forget that moment we had.

When I got the call that Kathy had passed suddenly from a heartattack I couldn't believe it. I couldn't believe that Kathy, an otherwise healthy person, could have passed on. She was so full of life the last time I had talked to her (a few weeks ago) and I was heartbroken for her family. Her daughter Genesa has been one of my best friends since 7th grade and because of that I've always felt so close all of the Millers. I got to California as fast as I could and I helped as much as I could, with whatever I could. I loved being there. I hated why I was there, but I loved being around family.

The last day I was there Genesa asked if we could have a family prayer. Bernard (her Dad), Lil Bernard (brother), Marcus (her husband), Genesa and I stood in a circle holding hands for nearly a half hour praying for eachother, friends and family of Kathy's that are also heartbroken. During the prayer time I had the opportunity to pray outloud for the people standing with me in the circle. NEVER HAVE I EVER felt as though GOD was speaking THROUGH me like HE was right then. I was sobbing, SOBBING, going through my prayer, thanking HIM for the Kathy's life and all the people she has touched through HIM.

It felt good to pray outloud for someone. It was a fear of mine, for the fear of not saying the right things. But with GOD speaking through me, I had no concerns, I just opened my mouth and let HIM take control!

Thank you LORD for the Millers. Thank you LORD for Kathy!

Creamy Chicken Taquitos

Creamy Chicken Taquitos
Recipe adapted from OurBestBites.com

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken (I used 1/2 lb of precooked "rotisserie" chicken found @ Kroger)
1 C shredded pepperjack cheese

small tortillas
oil for frying.

Heat Oil on stovetop in a 3 quart pot. I filled mine about 3 inches from the bottom.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

You can prepare up to this step ahead of time. Just keep the mixture in the fridge. **I made mine about 3 hours before hand so I wouldnt have to do it at 'dinner time'."

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2
inch from the edges.

Then roll it up as tight as you can.

Stab them with a toothpick or two to keep them sealed.

Fry until the tortillas are golden brown, then drain on paper towel and serve.

Dip 'em in salsa, sour cream, guacamole, or this dressing.

Guacamole: 1 large avacado, mayo, pepper, garlic salt, lime juice. Add enough until you have the flavor you like!

Chips: Cut up tortillas (flour and or corn) and fry until golden brown.

Jacksons Birth Story

I posted this 2 days after Jackson was born on another forum that I was a VERY active member in.

Thought I'd post it here so I never lose it!

Well, I had all of those issues with my high blood pressure a few weeks before he got here, and the hospital didn't seem to care. So, when I went back to the doctor on Tuesday morning, after being in the L and D the night before, )with a major headache) my Doc admitted me to monitor my BP and deliver my wonderful little boy!!

So, Tuesday morning at about 11 I got to the hospital, and after the long waiting process, we were checked in and started the pitocin and mag at about 2. Lots of hurry up and wait!

Tuesday night was horrible. I had a headache and felt like I was on fire from the mag, everyone in the room was bundled up and i'm sweatin bullets. SERIOUSLY!

Wednesday morning about 630am, the doc came in, checked me, tried to break my water, mentioned c-section and left.

at about 830 my water broke! That was weird. Really thought I was peeing on myself. Was totally embarassed until I figured out what it was!

After lots of words of wisdom from the doctors, nurses, family and friends, I was a little more at ease with having a c-section. AJ and I had a minute alone, and we prayed and knew that God wouldn't do anything to us we couldn't handle.

At about 1130 the doc and nurses came in, shoo'd everyone out, and prepped me for surgery. I was very scared, (never having been admitted into a hospital for ANYTHING BEFORE) yet so excited I was about to see my baby boy!!!!

They took me back and shot the stuff in my back (spinal tap), talked to me for a second, then AJ came in, the Dr's joked a little while they were performing the surgery, and then they said, ok Denise, here comes your baby boy. Then all I hear is Jackson crying and then I cry and AJ cry's then they grab AJ, and Clean up Jackson right there next to me so I can at least watch everything. I was in love. My insides were showing, but it was all worth it. He is wonderful.

About ten minutes after I got in there, I was done and on my way back to my room. Something about one of the meds was making me shake like crazy, but it was ok. The hospital staff wasn't too worried about it. So I was ok with it. While they were getting all of Jackson's vital stats and stuff AJ and I were talking in my room, just the two of us, and Jackson was about 5 feet away. NOT A SINGLE TEAR, he just looked over at us the entire time we were talking. I guess he recognized our voices. It was wonderful. It melts my heart

So, now all is well. I'm recovering! The nurses say I'm tough cause there are lots of ladies with Vag births begging for vicodin, and I haven't asked for anything, they just bring me stuff 3 times a day or so. I've always been told I have a high pain tolerance, I guess now I know they were right.

I thought this Mommy thing would be hard. But, right now I'm enjoying every single moment. AJ has to go back to work next tuesday, so things will get harder. My mom will still be around, but it's not the same. Having a baby really makes your love for one another show. I love my husband now more than ever.

Thank you God for bringing Jackson into our lives. I'm excited to see where YOU are going to take us! We're along for the ride, praying to raise him to know YOU and LOVE YOU!

Spaghetti Sauce (in the CROCKPOT!)

WHAT HAVE I BEEN DOING???

So, last week I had a pound of ground beef that was going to expire within a few days and I already had our menu planned and I wouldn't be needing it. So rather than waste the meat I cooked it up and added a can of hunts traditional spaghetti sauce. I threw it in a tupperware container and tossed it in the freezer when it had cooled.

Fast forward to this week...I wanted to cook in the crock pot but I didnt have anything to cook. So...I opened up the freezer and VIOLA! I set the tupperware container in the sink for about 5 minutes in a warm bath. The sides loosened from the bowl and the sauce was a solid block. I put it in the crockpot on high for 3 hours while it thawed and then switched it to low to let it simmer all day.

OH MY WORD...

The absolute BEST spaghetti sauce I have ever eaten. Seriously, I ate it for dinner, then for lunch for the next two days, because IT WAS THAT GOOD!!

I love my crockpot! ;)
